High Protein Spinach Mushroom Omelet


Ingredients:
1 tablespoon butter  (or just use butter flavored cooking spray if desired)
1 cup sliced mushrooms
1/4 chopped onions
1/2 C chopped red peppers
1 C chopped fresh spinach
4 whole large eggs
1/4 C water
pinch each salt and cayenne
1/2 C shredded cheddar

In a medium non-stick frying pan, melt butter (or spray pan with butter flavored cooking spray).
Add mushrooms, onions, peppers, and spinach. 
Saute until the fluid from the mushrooms has evaporated, and onions pre-translucent.

In a small bowl, lightly whisk eggs, water, salt, and cayenne. 
Pour over hot vegetables in pan, and cover. 
 Reduce heat and continue cooking until eggs are lightly set. 

Add cheddar, replace cover, and turn off heat. 
Let sit for 3-4 minutes.

Remove lid, and gently roll/flip omelette onto dish.
