Overnight French Toast Cups


5 cups cubed French bread
¾ cup sliced or slivered almonds
6 eggs
1 ¾ cups milk
2 teaspoons vanilla extract
2 teaspoons cinnamon
2 Tablespoons maple syrup, optional

In a large bowl, combine bread cubes and almonds. 
In a separate bowl, combine eggs, milk, vanilla, cinnamon and maple syrup (if using). 
Whisk until well combined.

Pour liquid mixture over bread cubes and stir until well coated. 
Cover bowl with plastic wrap, pressing down so plastic wrap is touching the top of the bread cubes. Refrigerate overnight.

In the morning, generously grease muffin tins or ramekins and spoon mixture into tins. 
Bake at 350 F for 30 minutes or until set.

Let cool at least 15 minutes before removing from muffin tins. 
Serve with syrup, fruit and additional toppings.

* Any kind of nut can be used or omitted.
* Chocolate Chips may be used, as well as raisins or any dried fruit.
