RECIPE - Lemon Pancake Syrup


Ingredients:
2 Tbsp corn starch
1/2 c sugar
pinch of nutmeg
pinch of salt
1 c water
2 Tbsp lemon juice (about 1/2 a lemon)
1 tsp lemon zest
2 Tbsp butter

Directions:
In a medium saucepan, combine the cornstarch, sugar, nutmeg and salt.

Stir in 1 c. water.
Whisk lightly to dissolve.

Place over medium heat and cook til mixture is clear and thick.

Whisk in lemon juice, zest and butter.
Remove from heat once butter is melted.

Serve hot over pancakes of choice.

*Makes about 1 1/2 cups.
