Starbucks Copycat Sous Vide Egg Cups

Ingredients
For the Egg Mixture:
2 c. cottage cheese
8 eggs slightly beaten
1 c. almond flour
2 tsp. baking powder
1/2 tsp. kosher salt

For the Filling:
8 ounces diced ham
1 c. shredded cheddar cheese
4 green onions, sliced
1/2 c. sautéed diced mushrooms
1 tsp.  fresh Thyme
1 TBS. flour

Directions:
Heat water bath to 167 degrees.

In a blender combine cottage cheese, eggs, almond flour, baking powder and kosher salt. 
Blend until smooth.

In a separate bowl, combine the ham, cheddar cheese, green onions, mushrooms, thyme and all purpose flour.
Stir to combine.

Fill a 4 oz. mason jar half full with egg mixture.  
Spread 2 TBS. of filling over the top of the egg mixture. 
Then fill the jars no more than 3/4 full with more egg mixture.

Screw the lids on finger tight, be extra careful not to put them on too tightly.
