Single Serve Pumpkin Oatmeal Breakfast Mug Cake
Ingredients:
1/3 cup old fashioned oats
1/2 tsp. ground cinnamon
pinch of ground nutmeg
1/4 tsp baking powder
pinch of salt
1/3 cup vanilla almond milk
1/3 cup pumpkin puree
2 tsp. brown sugar
1 egg white
1/4 tsp. vanilla extract
Directions:
Mix everything together in a bowl.
Pour batter into a microwave safe mug/jar.
Microwave for 2 and 1/2 to 3 minutes.
Top with Greek yogurt, dried cranberries, raisins and/or chopped nuts of choice.
