Homemade Fruit Pancake Syrup


Ingredients:
1 and 1/2 cups of fruit or berry of choice (Blueberry is my favorite)
1/3 cup sugar
1 Tbs lemon juice
1 cup of fruit juice
3 Tbs cornstarch
1/2 cup brown sugar
1/3 cup sugar

Directions
In a small sauce pan, combine fruit or berries, lemon juice and 1/3 cup of sugar. 
Cover and cook, on medium low heat for about 15 minutes, stirring occasionally. 
The fruit should be fully cooked and quite soft.
Strain and press the fruit to get the juice out. 

Return the juice to the sauce pan.
Add the remaining sugar, cornstarch and  fruit juice while whisking constantly.
Bring the mixture to boil over medium high heat.
Reduce heat to medium. 
Cook the mixture until thickens, whisking frequently, about 10-15 minutes.
Cool completely before serving.
