Ingredients:
1/2 cup ricotta cheese
1 egg
1/4 cup pumpkin puree'
Pinch of salt
Sweetener and flavorings as desired to taste
2 T flax seed meal (optional)
* This cooks on the stove.
* This seems to cook the fastest in a non-stick skillet.
Mix the ricotta with water to thin it out - you will want it quite thin if you are going to add the flax seed meal.
Add the egg and beat or whisk well.
Add the pumpkin and salt.
Sweeten to taste and add cinnamon and nutmeg or whatever spices you desire.
Stir while heating on medium heat.
When it gets "grainy", that's an indication that the egg cooking - stir in the flax seed meal at this point.
